Apple released iOS 14.7.1 officially: fix iPhone with Touch ID can't unlock Apple Watch
Shortly after updating iOS 14.7, Apple has just released iOS 14.7.1 (also for iPadOS). This is an update that fixes the iPhone (with Touch ID) unlocking the Apple Watch - this is a bug that plagues many people after updating to iOS 14.7.
You update by going to Settings - General settings (General) - select Software Update (Software Update).
Note: For those of you who have not yet seen iOS 14.7.1, just wait a bit and then re-enter.
